Apple Snack Cake

1/4 cup (1/2 stick) butter or margarine
1 cup sugar
1 egg
1 cup all-purpose flour
1 tsp. baking soda
1/2 tsp. each salt, cinnamon, and nutmeg
1/2 cup chopped pecans
2 cups apple, finely chopped or grated coarsely
1/2 cup raisins (optional)
1/4 cup powdered sugar

Cream butter and sugar; beat until light and fluffy.  Add egg; blend well.  Combine flour, soda, salt, and spices; add to creamed mixture; stir well.  Stir in pecans, apple, and raisins. Spoon batter into greased 8-inch square baking pan.  Bake at 350 degrees for 35 minutes or until a wooden pick inserted in center comes out clean.  Cool cake in pan; sprinkle top with powdered sugar.  Cut into squares.  Double recipe for 9 x 13 pan or sheet cake.
