Cream Cheese Squares

2 packages crescent rolls
1 1/4 cups sugar, divided
1 egg, separated
1 tsp. vanilla
8 oz. cream cheese, softened

Mix the cream cheese with egg yolk, 3/4 cup sugar, and vanilla.  Spread one package crescent rolls flat in 9 x 13 cake pan sprayed with baking spray.  Spread cream cheese mixture over top.  Spread second package of crescent rolls flat on top.  Beat egg white with remaining 1/2 cup sugar.  Use pastry brush to paint top layer of rolls with egg white mixture.  Bake at 375 degrees for about 20 minutes.  Allow to cool slightly and cut in triangles to serve.

 Shannon's aunt, Betty Crosby, made these rich pastries for Amanda's christening brunch.  They were gone before anything else.
