Fork Cookies

1 cup butter
2 cups brown sugar
2 eggs, beaten
1 tsp. vanilla
1 tsp. lemon extract
2 tsp. soda
2 tsp. cream of tartar
1 tsp. ground ginger
3 1/2 cups flour

Combine butter and sugar.  Add beaten eggs and flavorings.  Add dry ingredients to flour and then mix well with other ingredients.  Roll into a log and chill.  Cut off individual cookies and place on cookie sheet.  Press fork over top and then again at right angles to make a cross.  Bake at 375 degrees until lightly brown.

This is my Grandma Martin's recipe.  They were the first cookies my Aunt Opal ever made when she was a young girl learning to cook.  I remember eating these cookies at Grandma's when I was a little girl.
