Rice and Peas (Risi e Bisi)
3 cups water Pinch of salt 1 ½ cups rice 1 cup fresh shelled or frozen green peas (thawed) 1/4 cup rice vinegar
Bring water to boil. Add rice and salt. Return to boil and reduce heat to low. Cook until rice is tender. Just before serving, add peas and vinegar and toss thoroughly.
