Rice Krispie Squares

3 Tbsp. butter or margarine
1 10 oz. package regular (about 40) or miniature marshmallows (4 cups)
6 cups Rice Krispies

Spray a glass bowl with Pam.  Add butter and marshmallows.  Microwave one minute.  Stir.  Microwave about 15 seconds more until they are melted.  Or in the alternative, melt butter in 3 quart saucepan.  Add marshmallows and warm over low heat, stirring constantly, until marshmallows are melted and mixture is well-blended.  Remove from heat.  Add Rice Krispies to marshmallow mixture and stir until well coated.  Press warm mixture into 9"x 13" oblong cake pan coated with non-stick baking spray or butter.  Spray a flat spatula with cooking spray and use to press the mixture into the pan until it is compact and even.  Cool in refrigerator.  Cut into squares when cool.  Makes 24 (2-inch) squares. 

NOTE:  2 cups (1 pint jar) marshmallow creme may be substituted for marshmallows.  Melt with butter as above.  .

Eric made about a million of these when he was in high school and working at Amie's Deli in the Northwood Mall.  This was the first cookie Katie and Amelia could make on their own (with a little supervision).
