Southern Sandwiches
In North Dakota, sandwiches were
made with meat and cheese. I thought my
new Southern friends were weird when they made sandwiches with sliced
pineapple, tomatoes, or peanut butter and bananas. Strange food, but good. Each is made with real mayonnaise on white
bread. A slice of Vidalia onion is
delicious on a tomato sandwich, and a squeeze of honey sweetens the peanut
butter and bananas. Pimento cheese and tuna salad are also Southern sandwiches I learned to love.
