White Chocolate Macadamia Nut Cookies

1 stick (1/2 cup) butter
3/4 cup brown sugar
3/4 cup white sugar
2 eggs
2 1/4 cups flour
1 tsp. baking soda
Big pinch salt
White chocolate chips (about 1/2 to 3/4 cup)
6 oz. macadamia nuts

Cream butter and sugar, add eggs, flour, soda and salt. Stir in chips and nuts. Drop by tablespoonfuls on cookie sheet. Bake at 375 degrees for 10 to 12 minutes. For chocolate chip cookies, substitute semi-sweet chocolate chips for the white chocolate and walnuts or pecans for the macadamia nuts. Makes 2 dozen large cookies.

These are great cookies. They were made for the Legal Biddies by our favorite waiter and friend, Bob Schelhorn, who we followed around from restaurant to restaurant for Thursday lunches for years and years.
