Schnitz und Knepp

1 lb. ham or smoked pork chops
1 1/2 cups apple juice
1/4 cup brown sugar
2 apples
1 recipe Bisquick dumplings, or my dumpling recipe

Wash, core, and slice apples.  Cut meat into bite size chunks or slices and brown  in electric frying pan or other pan with a domed lid.  Add apples and apple juice.  Cover and simmer 3 to 5 minutes until apples are almost tender.  Prepare dumplings.  Drop by heaping tablespoons on top of ham and apple mixture.  Sprinkle with brown sugar. Cover and cook over medium heat.  Check after 10 minutes to see if dumplings are cooked.

This is a fast supper that the kids always loved.  Its good served with coleslaw. This was traditionally made with dried apples but fresh ones are so much faster and taste great.  My mother's great grandfather was Pennsylvania Dutch, which is where this recipe originated.
