Apple Bars

2 1/2 cups flour
1 tsp. salt
1 cup shortening
1 egg yolk and enough milk to make 2/3 cup
1 cup corn flakes, crumbled
5 cups sliced apples
1 cup sugar
1 tsp. cinnamon
1 egg white

Mix flour, shortening, and egg mixture to make dough.  Shape in ball and divide in half.  Roll out one half to 17 X 12 inch rectangle.  Fit into and up sides of 15 21/2 x 10 1/2 cookie sheet.  Sprinkle with corn flake crumbs.  Top with apples.  Combine cinnamon and sugar and sprinkle over apples.  Roll out remaining dough to size of pan and cover the apples.  Seal edges, cut slits in top.  Beat egg white until frothy.  Brush on crust.  Bake in 375 degree oven about 50 minutes until apples are tender and crust is browned.  Drizzle with glaze while still hot.  Cool and cut in squares.

Glaze:
 
1 cup sifted powdered sugar
2 to 3 tsp. milk or  lemon juice

Mix well. Drizzle on top of baked apple squares.

My Mother got this recipe from her North Dakota friend Marie Anderson.  The bars are like apple danish or squares of apple pie.
