Country Fruit Cobbler

6 cups fruit (peaches, pears, blackberries, or whatever)
2/3 cup sugar
2/3 stick margarine or butter
3/4 cup sugar
3/4 cup flour
2 tsp. baking powder
3/4 cup milk
Pinch of salt

Add 2/3 cup sugar to fruit and set aside to dissolve.  Heat oven to 350 degrees. Put margarine or butter in 9 x 13 inch cake pan or deep dish.  Put into oven to melt.  Combine remaining ingredients for batter (except fruit).  Pour over the margarine.  Do not stir.  Then pour fruit over the batter.  Bake approximately 1 hour.  Batter will rise to top, becoming brown and crisp when done. 

This is a very good and easy traditional Southern cobbler recipe from my cousin Deena Dietrich Hames.
