1 large clove garlic
2 to 6 jalapeno peppers, seeds removed
4 small tomatillos (about 1/2 cup)
6 plum tomatoes, diced (about 2 1/2 cups)
1 medium onion, finely diced (about 1/2 cup)
1/2 green pepper, finely diced (about 1/4 cup)
2 Tbsp. coarsely chopped fresh parsley
2 Tbsp. coarsely chopped fresh cilantro
Juice of 1 lime (about 2 Tbsp.)
1/2 tsp. salt
1/2 tsp. cumin (optional)
In a food processor, finely chop garlic and jalapenos. Add tomatillos and chop again. Remove the mixture and combine it with the remaining ingredients. Can be served immediately, but flavors will blend together better if it is chilled for several hours or overnight. Makes about 7 half cup servings, 0 W.W. points per serving.
