Toss together 1 ½ cups grape tomatoes, 12 cherry-size mozzarella balls (or 4 oz. cubed mozzarella), 1/4 cup snipped basil leaves, 2 tsp. balsamic vinegar, and ground black pepper to taste. 2 servings, 212 calories each, 4 W.W. points per serving.
I gleaned many easy and delicious salads from Prevention and Weight Watchers publications. I needed them to give me some ideas when my mind will not conjure anything healthy and interesting to eat.
