1 Tbsp. capers, roughly chopped
1 small shallot, thinly sliced
1 tsp. grated lemon zest
1/4 cup extra-virgin olive oil
2 Tbsp. wine vinegar or lemon juice
1/2 tsp. kosher salt
1/4 tsp. black pepper
½ cup fresh mint leaves, torn
1 lb. frozen green peas, thawed, or 3 cups fresh peas, lightly steamed
½ cup (4 oz.) crumbled Feta cheese
Combine capers, shallots, zest, oil, vinegar or lemon juice, salt, and pepper. Add the mint, peas, and Feta cheese and toss gently. Serve at room temperature.
