I have been adding recipes for a while to a new cookbook so I could find them when I wanted to cook them. In the electronic age, a digital version seems to make more sense, since I can add, amend, advise, adjust, delete, and reconsider as often as I want to and you can access them if and when you please. I've included the recipes from my original cookbook which many of you have. I'm also going to be adding pictures as I retest many of these recipes. They aren't the latest thing or nouvelle cuisine. They're comfort food, good memories, treasured family recipes, and occasional treats as well as many healthier recipes I've grown to like in recent years. I encourage you to add comments, pictures, and favorite recipes to make this a real family cooking spot. It's the next best thing to sharing a meal.

Collard Green Pot Pie

Cooked collard or other greens (about 4 to 8 cups) 
1 large onion, chopped
2 Tbsp. olive oil or bacon drippings
1/4 cup flour
1 can vegetable broth (optional)
Salt, pepper, and hot sauce to taste
Prepare your favorite cornbread batter (I like Trader Joe’s Cornbread Mix)

Saute chopped onion in oil until tender. Add flour and stir until smooth. Add liquid from greens and stir until smooth and creamy. If it is too thick, add some more liquid or vegetable broth. Add greens, salt, pepper and hot sauce to taste. Bring to a boil. (It is important to have the greens very hot when you add the batter, so the cornbread cooks well on the bottom.) Remove from heat and spoon into baking dish and spread evenly on bottom of dish. Prepare cornbread batter according to your recipe of mix.   If using Jiffy corn muffin mix, one package is enough for 8x8 baking dish.  For 9 x 12. USD two packages.  Spoon on top of greens and bake at 375 degrees about 25 minutes until corn bread topping is brown around the edges. Serve or freeze for later use. Serves 8 to 12. 

NOTE: This may be served with crumbled bacon, shredded cheddar cheese, and scallions on top.

This is a great way to use left over greens. It heats up well in the microwave for several days.
