1/2 head Red Cabbage
2 carrots
4 green onions
1 red pepper
1/2 bunch parsley
1/2 bunch cilantro
1 cup shelled edamame, thawed
1/2 cup roasted peanuts or pepitas
Chop vegetables. Toss with edamame, peanuts, and dressing.
Dressing:
1/4 cup peanut butter
2 Tbsp. soy sauce
2 Tbsp. rice vinegar
2 Tbsp. toasted sesame oil
2 Tbsp. avocado oil
2 cloves garlic, minced
1 Tbsp. honey or agave syrup
1 tsp. Sciracha, or to taste
Juice of a lemon
1 Tbsp. grated ginger
Salt to taste
