1 can Rotel tomatoes
2 cups (16 oz) low-fat cottage cheese
1 Tbsp. Taco seasoning
1 Tbsp. Ranch seasoning
(Or 2 Tbsp. of one or the other)
2 cups (8 oz.) Fiesta blend shredded cheese
Drain Rotel reserving juice. Add the juice along with cottage cheese and seasonings to a food processor and process until smooth and creamy. Add the drained tomatoes and shredded cheese and pulse about five times, just enough to combine. Serve with chips, veggies, etc..
