Juice of 1/2 lemon
1/4 cup olive oil
Pinch cayenne pepper
1/4 cup white balsamic
vinegar
1/2 tsp. dried tarragon
1/2 tsp. dried mustard
Salt & pepper to
taste
Mix well and serve over salad of mixed spring greens topped with sliced mango, papaya, or peaches and Vidalia onion rings. Sliced roasted beets and/or sliced avocado are also good additions, as is poached salmon.
