1 sweet onion, sliced in slivers (optional)
1 cup sour cream (low fat works fine)
4 Tbsp. apple cider vinegar (or to taste)
2 Tbsp. honey
1 tsp. dill weed or 1 Tbsp. chopped fresh dill
Salt and pepper to taste
Place cucumbers and
onions in bowl. Mix remaining ingredients and toss with
cucumbers. Refrigerate and serve within
1 hour. (It will get watery if delayed
too long.)
This salad doesn't go far when the boys are around. Cucumbers and sour cream is usually Kenny's contribution to holiday meals and everyone looks forward to it. For cucumber salad without the sour cream, use 1/2 cup vinegar, 1/4 cup water, and 1/4 cup honey.
