1 medium onion, chopped
1 clove garlic, minced
3 (15 oz.) cans black beans
1/2 tsp. cumin
1 (12 oz.) package yellow rice mix, cooked according to directions
Chopped onions or salsa
Heat oil in large frying pan; sauté onion and garlic on medium high heat until soft. Add 1 can of
beans (undrained) and cumin. Mash beans
to make a thick mixture. Add remaining
beans (undrained) and simmer until heated through. Serve beans over rice in bowls with chopped
onion or salsa.
So easy--and so good.
