I have been adding recipes for a while to a new cookbook so I could find them when I wanted to cook them. In the electronic age, a digital version seems to make more sense, since I can add, amend, advise, adjust, delete, and reconsider as often as I want to and you can access them if and when you please. I've included the recipes from my original cookbook which many of you have. I'm also going to be adding pictures as I retest many of these recipes. They aren't the latest thing or nouvelle cuisine. They're comfort food, good memories, treasured family recipes, and occasional treats as well as many healthier recipes I've grown to like in recent years. I encourage you to add comments, pictures, and favorite recipes to make this a real family cooking spot. It's the next best thing to sharing a meal.

Seafood Lasagna

8 lasagna noodles, cooked (or use no-cook noodles)
1 large onion, chopped
2 Tbsp. butter
8 oz. cream cheese, softened
16 oz. cottage cheese or ricotta cheese
1 beaten egg
2 tsp. basil
½ tsp. salt
1/8 tsp. pepper
2 cans cream of celery soup
½ cup milk
1/3 cup dry white wine
20 oz. shrimp, cooked and cut up
2 cans fancy white crab meat
Parmesan cheese
½ cup Mozzarella cheese

Cook onion in butter. Mix onions, cream cheese, cottage cheese or ricotta cheese, egg, basil, salt and pepper. Layer noodles on bottom of pan. Spread one half of cheese mixture on noodles, combine soup, milk, and wine, and stir in shrimp and crab (you can add any kind of seafood you wish). Spread one-half of seafood mixture on cheese layer. Repeat for next layer. On top, sprinkle parmesan cheese. Bake uncovered at 350 degrees for 45 minutes. Sprinkle mozarella cheese on top and return to oven until cheese melts. Let stand 15 minutes before serving.
