I have been adding recipes for a while to a new cookbook so I could find them when I wanted to cook them. In the electronic age, a digital version seems to make more sense, since I can add, amend, advise, adjust, delete, and reconsider as often as I want to and you can access them if and when you please. I've included the recipes from my original cookbook which many of you have. I'm also going to be adding pictures as I retest many of these recipes. They aren't the latest thing or nouvelle cuisine. They're comfort food, good memories, treasured family recipes, and occasional treats as well as many healthier recipes I've grown to like in recent years. I encourage you to add comments, pictures, and favorite recipes to make this a real family cooking spot. It's the next best thing to sharing a meal.

Energy Balls

1 1/4 cups Bob's Red Mill Old Fashioned Oats
1/2 cup peanut butter or other nut butter
1/3 cup honey or maple syrup
1 tsp. vanilla
1/4 tsp. kosher salt
2 Tbsp. power mix ins such as chia seeds, flaxseeds, hemp seeds
  or protein powder
1/2 cup flavor mix ins such as:
    chocolate chips,  dark or white
    peanuts
    raisins or dried cranberries
    unsweetened coconut flakes
    almonds, pistachios, or other nuts
    2 Tbsp. cocoa powder
    1/2 to 2  tsp. cinnamon
 
Place all ingredients in large mixing bowl.  Stir to combine well.  If it seems too wet, add a little more oats, if to dry, add a little more nut butter.  It should stick together with squeezed into a ball.  Refrigerate for 30 minutes or more to set.  When ready, use a cookie scoop to make balls approximately 1 inch in diameter.  Store in an airtight container in the refrigerator for up to 2 weeks or freeze for up to 3 months.  About 130 calories each?
