Grate carrots and beets. Add turnips or radishes if you wish. Put grated vegetables in a large bowl. In a separate bowl add
2 Tbsp.olive oil
1 Tbsp. apple cider vinegar or fresh lemon juice
1 tsp Dijon mustard
1 Tbsp. honey
Mix well and add to shredded vegetables. Combine well. Double dressing recipe if slaw seems too dry, depending on how many vegetables you use.
