1 cup flour
1 large onion, chopped
fine
8 scallions, chopped
2 tsp. baking powder
2 eggs
1 Tbsp. sugar
V-8 juice, beer, milk
or water
Mix all ingredients,
adding liquid to desired consistency, a little thicker than cornbread
batter. Set aside to rest before
frying. Drop by tablespoonsful into hot
oil in fryer. Dip spoon in water before
dipping each hushpuppy to prevent batter sticking to the spoon. Fry in deep fat until browned, and done in the
middle.
